Cooking for a crowd

I'm a glutton for punishment. My son is getting married labor day weekend. So of course I said I'll cook. I will have a pitmaket trailer (2 vaults and a sniper) to use. They are so freaking pretty. Anyone know what temp a pitmaker vault rocks at? I've been told ot keeps heat for a long time.

I figuring chicken for 50 the first night and brisket for 100 at the wedding. Some sausage for filler food both nights.

I'm not nervous about cooking really. I'm more worried about bridzilla showing up.

I'm going down memorial day weekend to do a test cook. Crazy woman wants to taste my bbq. Never thought I was going to audition to cook before.

I'm doing a wedding for some friends on the fourth there's going to be another guy cooking ribs 3 cases of spares. I will be doing 6 briskets and 6 Boston butts for pulled pork, 4-1/2 pans of baked beans and cornbread of all things of course there's other sides, but cornbread?

Bigger question here.....how is it that your sons fiancée has never been to your place for Que? I can't seem to have ANYONE over to my place without one of them asking for smoked something on the menu.

Rodcrafter....don't mean to hijack this thread but I'd love to hear how you are going to do cornbread in a smoker.

We cook cakes at almost every gathering so corn bread wont be any different. It cooks fine and very moist, but I'm just not used to seeing that at a BBQ.

I did a trial run on the cornbread in my new uds. It was amazing! Cast iron is hard to beat.
