Dino Bones

Here are some Choice Beef Dino Bones I did in the Smoker Clone.

Injected with beef base and then dry rubbed and spritzed with a combination of the beef base, apple cider and brown sugar. Cooked at 250 with Kingsford and Mesquite chunks until 170 then wrapped until about 205 probe tender.

Those are beautiful, Doc.
They are sure hard to find in the stores around here though. I have to ask the supermarket butcher if they have any short ribs, and then I ask if I can have some before they cut them.
Do you have any trouble finding them?

At the regular stores they are hard to find but I get them at Restaurant Depot and they are in a four pack. Angus superior Choice. This pack was 20 lbs. and cost $4.11 lb. a case is around 50lbs and the cost is about $3.60. It is usually just the wife and I so I don't buy cases unless I pre sell my BBQ.

Normally ask for the butcher to see when they come in. Catch em close to that day and let em know how I want them cut. But the can be hard to track down. Me and my cousin stopped 40 times on our way to Kansas last fall finally found some but we had to talk to the head butcher to get what we wanted the younger guys working in the meat area didn't know. Steak on a bone!

I believe they are "beef short loin ribs"
