Looks great! I've been researching summer sausage and sausage making, I'm getting ready to dive in here shortly myself so if you've discovered any pitfalls that you'd like to share I'd be grateful for any advice.

Keep the ground meat cold & stiff when stuffing. Don't fill the casing too much.

Rytek Kutas has a great book on sausage making. Also check out Walton's Inc. They sell everything you need and have informative article too. Seasoning are great too, been using them almost 20years.
