Third door witha goose neck hinge

I have a 6ft CC with 2 doors. I went with 2 doors because well it's big and I thought it would help with heat retention. Along with that I decided to make the center column between the doors removable so that it would be easier to cook hogs on. I kind of settled on using a goose neck style hinge that would be on the inside of the CC. I didn't want a hing on the outside mainly for looks. The goose neck hinge is proving to be more difficult than expected. Might go to a bolt on option using a bolt attatched to the inside and a wingnut for easy removal. Anyone ever put a goose neck hinge inside that has an easy way to do it?
Any thoughts welcome.

I thought about it - mostly for the cool factor but couldn't really figure out a great way to engineer it. It would definitely be cool though.

I saw a pit that used truck hinges mounted on the inside of the CC. They were Chevy's Spring? loaded hinges and he claimed he could raise the door with ease and hold it in any position. Sounded cool.

Thanks for the input guys. The hood mounts are a bit heavy duty for this because the piece is only about 12" wide. Ended up welding bolts to the inside of the piece and drilling a hole through the flange using wingnuts to secure it. Since it will only be taken off a handful of times a year when we do whole pigs I thought the bolt option wouldn't be too cumbersome.
