MYNEZ Cook 2.0 - THUNDA THIGHS

Last Tuesday I had to take my wife to her chiropractor, as she threw her back out the week before. Her appointment was early, so when I got her home and situated, I was able to fire up the smoker and make something I've been wanting to try for awhile now; I call 'em Thunda Thighs. I took some jalapenos and split them in half, seeded them, and filled them with cream cheese and a slice of pepper jack. Then I took skinless, boneless chicken thighs and seasoned them, then put the jap in the middle of it, and wrapped it up around the jap. Then I took that and wrapped bacon around the whole thing and held it together with toothpicks.

Here they are as I was wrapping them up. Got an assembly line goin!

Here they are on the smoker; only did 4, just wanted to try them out.

Once they got to 180 IT, I covered them in my bbq sauce, and let that carmelize for about 10 mins. Here's the end result:

MAN were they good!! Definitely going to be doing these this summer. Of course it's gotta be spiced up a bit, but man were they good.

MYNEZ performed well, and I am still learning her sweet spot. Still very responsive to intake, it took me a while to get it to where it was a constant 270 but once I got there it was steady as she goes.

In Texas we call them Armadillo eggs. You can even buy them mass produced at our grocery store chain called HEB. I think the ones I make are better then the store bought. The Pepper jack is a new twist I will have to try.
