Chef choice/Dessert/Pork steak brainstorm

Hello everyone, at the end of September I'm doing a big competition! In addition to the normal four I'm doing Chef choice, dessert, & Pork steak. I'm looking to do some brainstorming to get some new ideas! So far the only thing I got is gourmet tacos for chefs choice. What I'm thinking is slow smoking a beef jowl and making homemade tortillas with a cilantro slaw toped with an avocado cream sauce. I want to keep it simple because last year the guy who took first place in chefs choice made meatloaf... Anyway any ideas are appreciated!
