Hello from Northern Calif

Post by Mule rider » October 4th, 2018, 10:29 am

Hi, I an a retired State employee for Calif. I have been retired for 9 yr. I was introduced to smoking meats about 5 years ago, with a pellet cooker that I borrowed from a friend. After a couple cooks and some research I decided I wanted to build my own smoker, with the help of a friend we came up with a plan. It started simple but then grew. (which I am not sorry for) I live in a small community in northern Calif along the ocean. After using my smoker for a bout a year I had a friend of mine ask if I would be willing to cook for a wedding. ( for 250 guests) They happen to own a Eco Dairy and also raise pigs and have an organic egg ranch and grass feds beef also. They wanted to try to showcase their meats at the wedding . They said they had a caterer for all of the dinner but wanted me to smoke 5 different meats for the wedding. ( Brisket, pulled pork, pork loin, tri tip, and pork belly) I was able to pull it off with the loan of 4 other smokers and a Long long weekend. Everyone loved the meats. So now I do a couple of weddings a year. I decided to make a smaller smoker for the house. Here are some pics of my smokers. And I hope to be able to fine tune them with some help. Thanks I love to hunt and fish.

Welcome!

I too live in the north state but not on the coast. If the wind blows right I can smell Nevada and Oregon at the same time.

Welcome to the group. It sounds like you actually need a bigger smoker, not smaller.

I do have access to other smokers too. My wife asked me why I was building the smaller smoker and I told her "Because I can". lol

I overheard my wife telling the neighbors that I was building another smoker. Then she tells them that she has my other BBQ's lined up in the back yard as a wind break.... =))
