Howdy from NW Rural Ohio

Newbie to this site !
First whole hog I ever did was helping with one in 1974. Later about 1988 I started having hog roasts at my house every year until moving in 2000. Have really enjoyed it. Now for the last 15 years, I have been playing with smoking meat on the grill until I figured it was still not what I wanted to accomplish. So, I built a double barrel stove kit so I could get truly indirect heat with a rich smoke taste, like the one on the Jack Daniels cook book cover. Now I'm contemplating building a 500 gal or 1000 gal Franklin style pit for charitable events like church, tractor shows, and yet to be figured out events. Looking forward to learning more. May even turn the 'ol hog roaster to a water smoker as I understand they work really good.
