We always recommend two for an offset build but just one should be fine for a uds. The air is pulled down to the bottom thru an intake tube so no real affect of the wind blowing directly into the firebox. You just need to size it properly and I would say 2” is fine. Also remember that valves are expensive....expect sticker shock on a 2” brass ball-valve.
