Well, she's home and just about ready. Fired it up and hot burned it then steam cleaned it and seasoned it. Just have to put prep surfaces.

Well, I am going to smoke some ribs as payment for some of the help I got.
As far as the counter weight goes i guess you could call it a Marine thing.
It stands for "The

Well tomorrow morning we get our first hunk of flesh in the cooker!!
We are attempting a packer brisket! Yup, a full on, whole brisket!

Ok, Up a 6:00 am. Got the fire started, and took about an hour for temp come up to 250.
Put on the brisket around 7:00. Will check it in about 10 hours or so.

About 11:30 a.m. and temps leveled out at about 235.
Holding pretty steady. Added a few sticks and charcoal since initial fire up.
Sticks alone did not get it at first. We'll see.

Hey Gus. Been out of the good old USA for some rest and relaxation and just caught up on your build. Great job I must say. Still working on my first build, not going quite as fast as your build, but it sure is fun isn't it.
