Cellophane need not apply!

Post by Kansafornian » July 6th, 2012, 3:23 pm

Moving toward the "RCDS launch" (hoping that that goes better than the HMHS Britannic or Titanic...)
I thought I'd revisit my first smoker with a few pics.

Pic #1: "Bessy" in pre-smoke-mode

Pic #2: Smok'n a wild goat for the 2011 Labor Day street party

Pic #3: A successful boar hunt

Pic #4: Brined, Apple-Mesquite Smoked, "Shank-In" Wild Boar Hams

Looking forward to the 'racer position' coon and mud bugs. :grillin:

Usually more beers than smoke.

Also know and the Crawdad, Crawfish or Cajun Lobster. Considered as being the preferred garnish when smoking wild coon in the racer position :needfood:
not to be confused with smoking domestic coon, which just isn't civilized. :D

If it can't be smoked .... try frying it. It that don't work, it's probably best just left alone

Nah, you can really just visualize a lobster that is at best 4 inches long. Claws are too small to mess with but you boil them in a spicy concoction of your own chosing and then pull them in two and peel the tail part for the meat. The hard core crawdadders suck the spicy boiling juice from the head cavity as well or the not so hard core after several beers. They are more like a appetizer since there is so little meat on the buggers unless you have couple hundred in a 5 gallon stock pot.

Thanks for letting me know, sounds good. A lot of folk over here, including some of my family won't go near anything that isn't vac packed from a supermarket.
Iam hungry now.

Smokeone: As I understand it, the majority of Kalifornia's 'wild' goat population are feral; not true
'wild goat'. The one we took (on smoker) looked like a black and white version of a South African
Boar but much, much leaner and more stocky. Tasted great!

IMHO, all mud bugs should be étouffée...

Given the less-than-adventurous palates stated herein, I likely shouldn't tell of the
mealworm fritters my son's BSA Troop makes for extended hikes nor the backyard
escargot we capture, clean, and bake in a nice butter/garlic mixture??

Helix Aspersa, some fresh bread, and a bottle of <Enter Preference Here>, and...
Just thinking about it makes me hungry...
