My Current Smoker

My current smoker is my Weber Genesis gas grill with three burners that set sideways in the grill. To add smoke, I soak chips and wrap them in aluminum foil with holes in the top side and folded edge up. I just set the foil right down on the burner covers and let it go. Here's a pic of 5 full racks of baby back ribs I cooked for my son's 18'th birthday. I have two wire rib racks that I set end to end so they will accomodate the full length of the rib racks. I peel off the membrane and salt and pepper. I keep the heat down to about 280 and keep the center burner turned off for indirect grilling. 1 1/2 hours, flip, 1 1/2 hours, sauce and finish for 1/2 hour. One very important thing that I do on this grill before cooking ribs is that I clean it up before cooking. If I've used the grill very much, buildup soaks up grease dripping from the ribs will catch on fire and I lose control of the cooking. Just a quick scrape down makes all the difference.

Hey, theres nothing wrong with that.

I saw a smoker that was a cardboard box.
If it works then thats all that counts.

I plan to build a reverse smoker on a trailer. I probably won't ever be ccoking a large volume of food at once so it won't be a huge build. Just as I started planning, my neighbor put a small boat trailer out in front of his house for sale for $100.00. I grabbed it. When things click like that it makes me feel like it's meant to be. Labor Day Weekend Butt Roast on the Weber Genesis didn't turn out as well as I would like. Starting to wonder about a UDS to tide me over until the trailer cooker gets done.

I have never heard any complaints from anyone that tried out a UDS.

You will love the way it cooks.

Not sure if you have ever heard of this one so here it is.

We are supposed to take out meat from 40 to 140 within 4 hours. Unless its intact muscle meat and has never been probed or punctured. This is a tough one to find since most of the stuff we find does not meet this standard.

I never stick a probe until the 4 hour mark except on something like a fattie. Or a prime rib. Then I usually go for the 2 hour mark before probing.

Yours may have been on the verge of not killing all bacteria.
