I am a new member and have been que'ing for many years. About three years ago, I switched from direct heat grills to smokers. Last year my adult boys and I formed a team and competed in local competitions. The highlight for us was a third place at a KCBS event in brisket. I have used small "back-yard" types of smokers and have rented a reverse flow competition smoker. The time to build my own is here!

If it can't be smoked .... try frying it. It that don't work, it's probably best just left alone
