Proper Introduction

I apologize for no proper introduction before I posted my first message last week, but I am totally new to the smoker game and thought I was going to have time to work on building one last week, and came here looking for help. I am just your typical guy with a tank he wants to put to use, mainly for family outings, tailgating, etc. I realize some of you guys/girls are pros, so pardon my ignorance. I am from Arkansas, a native who was born and still lives within 100 miles of Memphis, which many people consider to be a BBQ mecca, as do I. I grew up eating (what I consider) great BBQ, but just never got into the cooking aspect, but now, here I am. I am certainly not foreign to cooking, can hold my own with most on a grill, but smoking I have always left to the pros. So I simply ask for your advice and again, pardon my ignorance. If your wondering where the moniker came from, it is a nickname given to me by an old friend at college, who is now deceased. Seems it came from....ok we won't go into that. Please read my post under Reverse Flow Smokers and I appreciate any advice I am given.....even if it's wrong!

Meathook, I started the build on Labor day weekend 2013 and finished it June 27, 2014. My first real cook was June 28, 2014 and folks are still talking about the ribs being the best they'd ever eaten. So, it is within reach with a bit of work and a ton of reading ! Welcome and good luck.
