Hi from the deep south
Been lurking for quite some time now so I guess a proper introduction is in order. I'm a transplanted yankee living in coastal South Carolina. Been a fireman down here going on 10 years now. Started smoking meat in a cheapy walmart vertical cabinet that was propane fired. Would have continued to think that I just didn't have the knack for smoking food till I found this sight. Explained sooooo much as to why my stuff always tasted just eh ok ish. Chugging smoke, leaks everywhere, and sooo hard to keep temp stable. After months of trolling and drooling I finally got a tank and should hopefully be in smoked food bliss in the near future. Thanks for all the excellent information, it's definitely appreciated.
