If it can't be smoked .... try frying it. It that don't work, it's probably best just left alone

I did a test smoke last night and sprayed it down with some pam. it fluctuates a ton on the grate. definitely needs a heat shield in it! gonna play around with it some more this weekend! :beer:

here are some pics from this weekends first smoke. the man law thermometers may glow in the dark, but were very disappointing as far as reading temp. at 7 am the smoker was cold... was about 67 degrees outside, smoker was in the shade... thermometers were reading close to 100 in the grill and differed from side to side by 30 degrees... when I fired up the smoker, they never went above 200. initially I heated the smoker up to about 300 with lump charcoal and let it cool down to about 220. thermometers never moved. anyone recommend a good thermometer? I dont think the temp was varying that much from the grate to the thermometer.

the pork was on for 9 hours. mustard rub. chicken was on about 6 hours. probably the best pork I have ever done. it was nice to do a shoulder and a butt at the same time. the butt one... it was super juicy and awesome flavor. most of my friends didnt even add sauce! chicken was on for 5.5 hours.

I am going to add dampers to the exhaust pipes and definitely have to burn logs in this thing. it ate up over 30# of charcoal and 3 bags of hickory chunks (my source for logs was out of town this weekend). I am also going to line it with more fire bricks to try and keep the heat in. the thin wall of the barrels is not very efficient.

in lieu of making heat shields, I put an aluminum pan full of water over each pipe. kept everything super humid and really balanced the temp (without it it was over 50 degrees hotter directly over the pipes).

other then ripping threw fuel, I thought it cooked well and rather painless. internal pork temp was about 186F after 9 hours.


my dog Richmond patiently waiting for Shannon to give him some Chicken... never happened :P

I still like that sliding door design, not a single puff of smoke is coming from around that slide and she's at full bore cook it looks like. Very good craftsmanship! :kewl:

You might play with a water heater blanket on the cook barrel to see if that helps with fuel consumption. Baffles over the pipes in the cook chamber should really help the temp variances you're seeing and I think you'll like the tel-tru guages - might mount them in the end wall about 2 inches above the grate for best reading so your slide door still works correctly and buy at least a 4 inch stem ... fwiw ... :)


And on the eighth day God created barbecue …. because he DOES love us and he wants us to be happy. :D

Thanks! it works great! got a handle in for it saturday. have to put it on this week! also going to add a shelf or two!

thanks for the tip! I was thinking about some kinds of insulation and then an outer heat shield so people (mostly kids) dont get burnt! that bottom barrel gets hot!

Adding those dampers will slow your fuel consumption quite a bit. We used to run through 10 blue bags each cook. Through dampers and a few other mods we went through 2.5 at the last competition.

I helped a friend of mine build one of these, they are quite simple, the only mod that we made was to put fire brick in the bottom barrel up about half way on the wall and then made a basket out of rebar on legs to slide in and out easily, used a fireplace shovel and brush to clean it. smoked like a charm, we did put a damper over the holes coming into the smoke chamber by cutting up a 3rd barrel. hope this helps.

thanks for the info! I am definitely adding more fire bricks. I clean mine with my shop vac! works like a champ. the water trays worked real nice over the holes coming into the smoke chamber. I definitely need some kind of basket! gonna make something soon! picking up a load of hickory and gonna try it again this weekend!
