My current smoker

Here is my current smoker. I just put 3 pork butts on about an hour ago to make pulled pork for our church's weekly car shows. It is a New Brunfels that I bought about 15 yrs ago. 2 of the butts will be used this Wednesday for the car show and 1 will be frozen for a future car show. I can't wait until Gus and I get the new smoker completed so I can go from cooking 3 butts at a time to being able to cook 20+ at a time. It will certainly free up a lot of my weekends to do other things. (And yes I know the current smoker needs a paint job, lol)

Anyway, here are some pics I took as I put the butts in thre smoker.

Not bad! the butts look great!
looks like there is a knockout on the right end of the smoker all ready.... knock it out and move the firebox down, plate off the old hole and install a baffle plate. would make a real nice back yarder!

THat smoker is a great backyarder. It looks like it does just fine for you!


BBQ is just smoke and beers!
Usually more beers than smoke.

did you pull that membrane off that Butt LOL I am just kidding looking good smokeone I know you will enjoy your new cooker I am a little confused I taught that was smokeones post that is what working nights will do to ya!! still looks good bro

It does do fine. It has done me fine for 15 yrs now. It's just that now I need to use something much bigger since I am making so much.

I bought it from Home Depot about 15 yrs ago. It is a New Brunfels. I had to assemble it, and about a dozen yrs ago I took it to work and had one of our welders reinforce the legs, but other than that it is store bought.

And since these butts are used to make pulled pork sandwiches that we sell at our church's weekly car show, I try to stay fairly consistent with my rub. Yellow Mustard followed by a dry rub that varies a bit, but for the most part remains the same for consistency purposes.

The only way to pull it in my opinion is by hand. Something about being able to feel for any fat, membrane, or grizzle that you cannot get by using any type of tool.

If you are referring to the flat top on the firebox...that's not a mod...It came like that factory built. The Only mod I made was mounting brackets for a rotisserie/motor, which you can see on the outside to the right of the cooking chamber.
