Hi everyone, just wanted to say a quick hello.. I've got some grand ideas for the upcoming antipodean summer involving an unused city block big enough to fit 1500 people and a friend who's willing to fund and put up with my grand plans.. so its a win win!

The plan so far is to track down a propane tank, or get some buddies to fabricate a large scale grill and offset smoker.. i suppose dual use is the name of the game thus far.

Somehow stumbled across this forum and dare i say it, ill be back very often and will keep you all updated with what comes next.

Little bit of background history of me - I was at one time a professional chef, so the cooking part comes naturally, and the result of a recent trip to the states resulted in a life-changing barbecue experience. I just love the way all you Americans take pride in doing things to the best of your ability and with the best quality, which has resulted in the best barbecue in the world. I just want to bring part of that to my little corner of the world.. Been smoking and grilling with a WSM for the better part of a year with a lot of success and now just want to scale up the whole operation

If it can't be smoked .... try frying it. It that don't work, it's probably best just left alone
