Hello. I am Ken. Live in North Tx. Been BBQn about 20 years. On my third smoker build. This time it is a reverse flow design. Just had to try it. Out grew my other pits so building a bigger one. Pit is on 19 ft trailer and pit itself is 36 " diameter by 10 ft.

If it can't be smoked .... try frying it. It that don't work, it's probably best just left alone
