Hi, I'm Rodney. I have been smoking meats since 1993, when I received a New Braunfels offset smoker. I love that thing, even though it is a struggle to maintain proper temps in it. About 5 years ago I bought a Mastercraft electric smoker. Absolutely love the "Set it and forget it" aspect of smoking meats, but that isn't true BBQ to me. About a year ago, I came across a 500+ gallon water tank. So I've been lurking here for a while now.

I have been in a local (Tucson, AZ) rib competition, Grills Gone Wild, for the past 5 years and the past 2 years have won Judges choice. I love doing this with my kids and the fellow competitors are all great. It is a charity event for a local teen group and this year there were about 200 guests that we served. I take the old smoker for this and have beat guys using Traegers, Green Eggs, Komodo, and even charcoal grills.

I am now in the process of building this 500 gallon offset smoker. Brought it home Oct 27th, and have slowly planned it out and started building. I have not welded since high school...32 years ago. So teaching myself yesterday, with help from the internet and Frank's videos, I welded on bullet hinges for the two doors and 1 1/4" steel straps to the inside of the cook chamber, leaving a 1/2" lip to the inside. I have some more planning to do and to figure out the calculator. I have really enjoyed this site and have taken some great info from here.

Welcome to the crew. Looks like you have things under control.

Learning generally boils down to "Repetition or the avoidance of pain", some people learn by doing, some by watching and some just have to pee on the electric fence.

Whether you think that you can, or that you can't, you are usually right. Henry Ford
