Hello!!!

First off, thank you for letting me join the forum! I look forward to learning things from each and every one of you.

Earlier this year I became very interested in the art of smoking. As a kid, I had a neighbor that would smoke all different kinds of meats for the neighborhood get-togethers and I have fond memories of hanging out with him as he spent days cooking it all. Having moved a lot in the past several years and being far away from home, I found I miss the food and hospitality I knew growing up. Smoking is a way I have found to feel connected to home and share it with those around me.

I bought a Dyna-Glo Signature Series vertical offset smoker and overall have been pleased with its performance. It was a good smoker to get started on, but I am ready to get something bigger that can handle more volume. I'm leaning towards building my own and have looked at some of the plans that are available on smokerplans.net. I'm still figuring out what I want to do and look forward to picking your brains.
