A few years back, I floated the idea of a 250 or 500 gallon tank based smoker. My g/f promptly put the kibosh on that idea, but she's just fine with the double pan GF.

Phew...units almost as important as a decimal. Think I’ll use this as a real-life example for my 11 yo. He is starting g word problems in math class and not always seeing the importance of labeling his answer.

I would definitely use the 10 inch channel.
It’s always easier to block off part of the channel then to have to open it up.
Same principle ( but opposite) as building a reverse flow when we extend the baffle past the grease damm. That way if needed we can open it up with minimal effort.
