Hi,
My name is Jan. I live in Brisbane Australia and have been a hunter, fisherman, sausage maker, curer and smoker for a long time. I have built several smokers over the years and my latest one is made from a converted bread proofer.
All stainless inside and out and fully insulated. This coming winter it will be fired up.
In the smoke stack I have a removable slide with several small computer fans to help me dry and also smoke my biltong.
When time permits, I will certainly be a good participating forum member, no doubt I also will have lots of questions.

Biltong are strips of meat, dipped in a spice/salt mix, cured and dried. I just like mine smoked as well.
A bit like Jerky, the Biltong strips are just longer and thicker. Google it for recipes and photo's

Ok... I found it. Biltong: Chinese for nose opening. Location: At the highest point of the nasolabial groove.

Hi All,

My name is Warren and I live in North Wales in the UK. I've been loving BBQ for years but I'm pretty new to low n slow smoking - I have a Weber WSM which I enjoy but I wanna get creative and build an offset smoker. I haven't found much over here to help me with the design so I'm hoping you guys will help steer me in the right direction....and when I say 'build' I really mean design cos I couldn't weld two sticks together (I'm defo much better in the kitchen than the workshop!), but hey it looks fun n maybe learning to weld is on the horizon! Other passions are biking..mountain bikes and a bit of road biking...so all things Bikes n BBQs keep me happy. Looking forward to getting to know you guys.

Hello all! I've been lurking around the site for quite some time now and thought i may as well jump in and say hi. I currently bought a set of plans from the smokerbuilder site and as of last night have started on my 250 gal rf build. I think i can confidently say there isnt anything like this in use here in the adirondacks lol.

Welcome Jan by the sounds of the it, it seems as though you might be from SA or know someone from there. I live in the UK ,but from SA myself, I also make my own biltong, boerewors as well as Droewors.

Hahaha, you're a cack(cackle) Puff, biltong is a traditional style of drying meat in the southern African countries(I think the Kalahari bushmen do it, I may be wrong), like jerky but way more spicy & way more tasty. There's also Droewos, a traditional sausage(boerewors) that's dried, it's also soooooo good, I usually take some to work to snack on between meal breaks.
