I gotta bite the bullet and get liscensed for my sauces and rubs. I already sell to way too many folks but my wife is a nervous wreck whenever I deal with total strangers since I'm not a business and don't have any insurance. All it would take is one person to claim they got sick and sue me. Wow I sound paranoid. The sad part is that I don't see where I will ever have a commercial kitchen that the health department would sign off on.


If it can't be smoked .... try frying it. It that don't work, it's probably best just left alone

all you gotta do is have a room with a 3 bay sink, thermometers, and stuff. You can also check out OTT's Foods Private Labeling I just spoke with the lady down there and she said to check out that page and you can call here if you like. they are located about 3 hours from me in south western Missouri.

I am probably in the most hellish county when it comes to red tape and cottage industry. The viscious loop is basically as such. I can't get insurance until I have a business liscense, I cant get a business liscense until I have a health department certified facility. The only way to operate out of your home dwelling is to have no access to the production area from the main dwelling itself. All piping must be independent from the main dwelling. I found a place a few months back that I thought i might be able to just buy outright but I wanted the health department to swing by to toss in the perspective on the joint. NOPE, I have to have a business liscense on file before they will schedule an appointment for inspection. Thanks for the link, we actually had such an establishment here in town but it went under about 2 years ago. I think they offer a great opportunity to small businesses like myself.

There are lots of private labelers that will bottle your sauce for you. One that I found a lot of guys use in KC had an 80 gallon minimum. That is pretty low. Just need a place to store 500 bottles of BBQ sauce - no commercial kitchen needed. They will get the nutrition information and help you get you labels. I will see if I can find their number again. There is another place in Fremont NE, not far from Omaha here that will mix and bottle rubs - that one is International Spices.

Omaha has similar rules - can't mix residential and commercial dwellings. I am always paranoid about people getting sick so I only deal with people I know.


Nothing I like more than to kick back with a Zima and a Virgina Slim reading 50 Shades of Grey with DCman (The Czar).

If you stumble across any of their names I can always ask if they are associated with anyone in the south. My wife works with a local grocery chain, they have already expressed a genuine interest in carrying my products. Heck I have fed them enough ribs and butts over the years they are some of my best personal customers.
