Are you going to put a bottom plate on it? I am thinking a lot of heat could be lost by leaving it open. On my double pan I have a bottom plate (by the wheels) with insulation between it and the grease pan.

I am most certainly putting a bottom plate, it's cold enough her to have an effect on my fridge smoker & that's insulated pretty well.
I'm looking more towards a suckling pig for my celebrations.
