Mounting a thermometer to insulated door

Hi folks, I have bought the tel tru thermometer and installation kit.
Either I'm missing something or it was not made for mounting on an insulated (thick) wall.
How did you guys mount your thermo?

I haven't made the insulated version "yet". But I have seen others do it a couple of ways. One is to counter sink the gauge through the outer skin and really only mount it to the inside skin. Others have purchased the longer stems and just mounted it on the outside adding a eyebrow above the gauge

The mounting threads will not allow mounting thru a thick insulated surface. I have seen the countersink method but that has to be planned during the build or it becomes a lot of work to retrofit it. Another idea is to drill and "thread" the outer skin and just drill a smaller hole just large enough for the probe in the inner skin.

If you mount it on the outside you just cut a pipe coupler in half and weld it to the outer steel and screw it in.

I'm using a 1/2 inch pipe thread coupler with a short piece of 1/2 inch pipe,so the tube the gauge is threaded into that the probe sticks through is welded and sealed to both the outer and inner skins of the door.
