nice mods Jethro ... maybe I will snag that for my kettle ... it's just sitting in the back yard it could use a tweak or two. I just realized what the foil wrap was. Here's a que tip for ya. Swing by radio shack and get a pack of their large aligator clips (about a buck 25 for a dozen). You just bend the ear flaps back away from each other and you can thread the temp probe right onto the clip. When you clip it to your grill grate it will stay perfectly horizontal. JMTCW


If it can't be smoked .... try frying it. It that don't work, it's probably best just left alone
