Old Oklahoma joe smoker

Post by Tinker » April 30th, 2015, 9:30 pm

I recently came across an old Oklahoma joe smoke the kind that has the firebox, horizontal cook chamber and vertical cook chamber it appears the opening from the fir ax to cook chamber is twice the size you would think it should be by running thru pit calc
I ran it the other day with four small splits and temp went up around four hundred only trouble is i was not able to manage the fire Dow to 200 range I even closed the air intake off and still ran hot I know there are some cracks that need to be sealed up around the door but heck one thing about it it did burn clean put one split an hour or so just wish I could manage the fire better should I close down the throat has anyone had experience with this type unit it may just be me and needing to learn how to run it and I know I need to seal the fire box off a little better I would like to keep it as original as possible just to keep its originality so the mod I do I want remove able to keep the authitisity if possible

Long time no see !! I would definitely seal up the leaks on the FB and do a few test burns. I know that Frank has been manufacturing a tuning plate that was designed for the OK Joes, I think they are selling it at bbqsmokermods.com. You might take a look at it, it looks like it can be installed and removed in a few seconds.

:yth:

And you can always bolt an piece of plate over the throat opening to reduce it to the right size, that way you could remove it later for some crazy reason. Oh did I say that out load??

Omagerd...I had no clue this site existed. I just bought the baffle plate for my Brinkmann! I was going to design it with the scraps from my smoker build, but for $75 it had holes and all!

Wish I had a coupon code...hehe.

PW, I didn't know if it was safe to put up the web site or not. I wouldn't want to get hit with DC's spam hammer b-(
They've got some pretty cool stuff on there.

Hum could it be possible that I'm using wood that is to small smaller wood burning hotter and faster versus larger wood burning slower cooler more consistent seems if that's the case I may have stumbled across one of my problems once I put the larger wood on temp cooled down smoke thinned out might I be on the right track ???

Yeah I'm super jazzed. Added the gasket/latch kit and they even called to confirm my addy. Sweetness! Thanks again T.

As to wood, i always use the larger chunks. I still have temp control issues because its not properly sealed, and wide temp differential from left to right. The products i mentioned above will remedy that.
