My self and several friends are going to enter our first Competition this spring. I am team captain so everyone is looking to me for direction.

They are doing it as the New Hampshire State Championship on the Sunday for the KCBS and Saturday is the NEBS (New England Barbeque Society) Grilling Comp.

How much should we try to do. We have cooked together many times and done parties for up to 200 people. Out of the cast of characters we have some great cooks and better hell raisers.......But I want it to be fun. We have cooked just about everything you can dream up for BBQ and or sides.

Should go hell bent and enter everything or just Do our top 5 or so things?

Saturdays list

Grilling entries must follow NEBS open garnish rules.
-Appetizers: Any food item or combination of food items that could be consumed as an appetizer. It must prepared and presented in accordance with NEBS Open Garnish Grilling Rules and presented the way the cook wants it to be eaten.
-Wings: Bone-in Chicken-wings, whole, or one, or both sections separated, prepared and presented in accordance with NEBS Open Garnish Grilling Rules and presented the way the cook wants it to be eaten.
-Must have Bacon: Bacon - Any food item or combination of food items, one of which must be bacon (cured, smoked, pork belly) prepared and presented in accordance with NEBS Open Garnish Grilling Rules and presented the way the cook wants it to be eaten.
-Burgers: Any food item or combination of food items that has been ground, formed into a patty prepared and presented in accordance with NEBS Open Garnish Grilling Rules and presented the way the cook wants it to be eaten.
7:00am gates open.
8:00am Meat inspections for Saturday and Sundays start
9:30am Last permitted to drive into competition area, if you need to come in late make arrangements for an escort prior to arrival.
10:00am Cooks Meeting for NEBS grilling Saturday
12:00pm Judges meeting
12:00pm People’s choice turn in.
1:00pm Appetizer turn in.
1:30pm Wings turn in.
2:00pm Must have bacon turn in.
2:30pm Burger turn in.
4:00pm Awards Presentation (approx)

Sunday is Standard KCBS

11:00am People’s choice turn in
12:00pm Chicken turn in.
12:30pm Pork Ribs turn in.
1:00pm Pork Butt/Shoulder turn in.
1:30pm Beef Brisket turn in
4:00pm Awards Presentation (Approx)

I would stick to one to two of the Saturday choices, if you are planning on doing the kcbs. Since it's your first, I would spend Saturday setting up, shiggin, and prepping. Use your time meeting other cooks, and maybe learn a few tips and tricks. Grab a beverage and just stroll around, that's the best tip I have. Generally bbq guys are pretty friendly, especially if you have refreshment. :beer:

And along those lines - enter all 4 of the KCBS categories - might as well learn something about the scores on all of them. :D


And on the eighth day God created barbecue …. because he DOES love us and he wants us to be happy. :D

Knowing nothing about comps... I still agree with Gizmo. That light green 1952 Harley won 1st place in a bike show. I'd only parked it in that area because it looked protected enough to leave it and walk around. When I was leaving, a guy said" where ya goin', we're handin out the awards in a few minutes, you took first place!"

Hey, you never know..!, gotta be in it to win it... And a line we used at the go go bar....all you need is a dollar and a dream !

I know there are prep videos from Team Smokerbuilder somewhere. I think there on here, but I know there are links on Facebook to them. I won't say they will get you a call, but shiggin is shiggin. :D

I agree, don't sweat to much over the NEBS contest. It will cost more it sounds like anyway and be easy more difficult. Concentrate on the KCBS one since this is your first. He is a link to my you tube channel with some info ..
