new smoker. should I season it

Post by webbsa » August 27th, 2011, 10:25 am

just curious, once my build is complete should i season it, ie: oil it and use high temp for a while. also on the reverse flow design is it helpful to install a movable baffle on the firebox outlet to control heat or is this unnecessary. :ar! **==

webbsa, I season all my builds using the lesser priced version of Pam. Once the cooker is completed I have the inside sweep blasted and rinse it out with a water hose. Then I build a good fire in her bringing the temps up to around 325°then when the cooker is dried out I lightly coat the inside including the grates with the spray oil and run the cooker for at least two or three hours at the 325° temps. I like to have some leg quarters on hand for the cool down, chicken is a fine seasoning meat I hope this helps.
As far as the firebox damper personally I do not see a need for them, I feel they are an option that really is not needed.

Yup, what they said about the season.

And I am one of the goofy dudes that likes to be able to shut the firebox off.

I hate it when I have a full full load in the big smoker and have to have my head in the smoke for long periods of time while loading or unloading.
I know its really not that big of a deal but still. If I can shut the smoke off then thats even better and with luck, my fire wont rage out of control with the extra draft.

Heck, I want a butterfly damper on my UDS between the fire and the food.

Gotta agree on the coolness of the handle.
