RF Cooking Times?

Post by FATNECK » May 16th, 2014, 3:37 pm

Guys, I'm trying to see how longs does cooking butts on a RF takes? I know there are differnet variables that will come in to play. I have read thru a lot of post and I'm see 8 to 9 hours. On my old pit(indirect cooking) it would take 12-13 hours almost everytime.

I'm planning on preheating the cooker @1:00 in the morning and putting 12 butts on @2-2:30 depending on temp. My goal is for cooking @225-230 for 12 hours. I have a party that starts @3-4:00 in the afternoon. Guess I don't want to finish in 8 hours and have the meat sit in a cooler in foil for 6hours. I will be cooking ribs and chicken wings later that day as well. Hopefully with 80lbs of meat, the RF will cook at a slower pace than my test run.

I might just be over thinking this whole thing. Its done when its done. If not, mixed another drink and throw another log on the fire and everything will be alright. Thanks

I don't think the type of pit really matters. It all depends on cooking temp, weight of the butt, bone in or boneless, and how long it decides to get stuck at 160°. You really can't control how long it gets stuck unless you wrap it.

What he said....that's why a lot of people will wrap at 160 to get past the stall...

I haven't wrap butts in years. Maybe that's the reason it takes me so long. I'm in it for the long haul. Thanks for the advice.

I wrap them and can count on them being full of juice and on time. I cooked 1 yesterday for example I put it on at 7:30am wrapped it at 12:00 and it was at 201 by 2:00 pm. I left it in the cooker as it cooled down, while I finished my day at work. I put it in an cooler at 4:00 to take home, an hour later, the bone pulled right out and there was so much juice I couldn't use it all.

I'll stick with that plan.

Guys- thanks for the advice. I cooked them for about 10 hours with no foil. They were very moist and starting to pull apart when taking them grill the cooker. Interal temp was about 196 degrees. I threw them in a cooler for 2 hours before I started to pull them. Nice and juicy when I was pulling them.

If it can't be smoked .... try frying it. It that don't work, it's probably best just left alone

BBQ is just smoke and beers!
Usually more beers than smoke.
