cleaning inside of cooking chamber....

HI....
close to finishing a rectangular reverse flow smoker, Just fyi, 28x24x20 cooking chamber. The metal I used, 3/16" flat steel and 1" angle, was given to me by a friend who owns a metal recycling company. The steel, prior to my obtaining it, sat outside for an undetermined period of time, long enough though to show significant rust on some pieces.

I am anal about food safety and wonder, prior to burn in, would you recommend running a sander on the inside (as best I could) then pressure washing the inside to remove as mush rust as possible? Then proceeding to burn in? Or burn in should be enough?

The shelves are made out of expanded metal I did purchase from a local steel supply shop. It has been inside a warehouse and inside a garage, never outside and exposed to the elements.

I would upload some photo's but they are all 3k or larger and when I have tried in the past I have received and error message.

As I stated earlier, I am very concerned with food safety and want to ensure none of the product I serve is contaminated.

My inclination is to sand and pressure wash immediately prior to burn in.

I say loosen any flakes of rust, scuff up any surface rust, rinse it with a garden hose, completely air dry, spray it down with Pam and start a fire. I think you're over thinking it. As long as there isn't any mold in there, you'll be just fine.

It doesn't matter even if there is mold. Burn that big boy out and let the germs dance with that. Nothing in a cooker a good hot fire won't take care of.

It probably sounds like we are all messing around here. Sorry. If you do have concern. Then knock off the loose with a brush. Fire up the cooker to 350 ish and then moderately spritz with water. This will steam clean without using a giant steam clean pressure washer.
