The insulation, in my experience, cuts down fuel consumption a bit but safety was my driving factor as my outside skin stays a full 500 degrees cooler than the inside wall.
They all have a specific profile and you will have to learn how to use that profile to get it to do what you want. I spent a whole 10hour day doing a “practice burn” on mine before I ever put a piece of meat on it. Learned a lot that day as I could play with it to see how it responded.
