I used the Butchers injection on the last brisket that I cooked and it really retained the moisture. The rub that I used was a little bit bland IMO but you live, you learn. I have used some of the BPS and SM rubs (not those 2) and they were pretty good.
Here’s an update.
165*F internal.
Still running lower temp like 250ish.
Gonna pull it off about 203*F

I am certain this is the best brisket I have ever cooked.
The layers of flavor are incredible.
That is a great rub combo.
I put the peppered cow on first then topped with the jalelujah rub.
And butchers prime injection never disappoints.

Nice! Once my new smoker is up and running I am going to try a brisket again. I have done small one's really well but the 15+ pound full packer has been a challenge for me on the equipment I have.
