I did not think toggle clamps would work plus I don't like the look, so I built T-handle clamps now it looks like a pressure cooker, and I couldn't resist doing some ribs and again they were great,
now i have to stop using the smoker so i can get it finished, I sanded all the leftover paint getting ready for paint, trailer will be standard paint and the smoker will be heat paint,
so I would say we have success, we are having game night this weekend (a group on my wife's friends from the bus she rides with each day)I do the cooking so I asked her what should I make? she replies make ribs on the smoker (she has never liked my ribs from the oven/Webber I have always made her chicken) but Hun its -20 so It's too cold I can't do ribs on the smoker, she was disappointed so all the time spent on the smoker was not a waste,
Well now that we are our weather is getting better I finally got some paint on the smoker, I just need to make some fenders and taillights, maybe a wood box
well I did my first big smoke this week, starts wit 12 racks for 3 hours then they went into 3 steamer pans and back on the smoker with 60 chicken legs for two hours, chicken went into pans and the ribs went back on the rack for an hour, about 30 from the office had a feast so very happy with the performance of the stubby, I burned about 1 recycle tub of splits and a lintel Kingsford, I was so excited I forgot to eat breakfast and I did not take any pictures
yes each pan had 4 racks with apple juice and sealed with foil, I really think the pans work just as well as foil takes less room and less foil but I do have pans to wash, plus I was able to able to do the chicken hotter temp and the ribs in pans can handle more heat,
the ribs were great tender and almost ready to fall off the bone but yet still firm so I could still cut them up,
That’s good news about the ribs in pans. I had that idea a while ago but never tried it. Wrapping each slab can get messy and takes too much time especially when u are cooking more than 2 or 3. Being able to wrap 4 slabs in one pan is awesome.
Love the build nice work. Ive got a stubby 120 and am looking at firebox dimensions. Ive used the calculator to get a good sense but would love to hear whats working in practice. What dimensions did you use? Do you need all of that size? Would you make it bigger or smaller next time? Height to width is ok?
