Wild hog shoulder and pork belly cook

A friend gave me a hog shoulder to smoke for him. Knowing they are very lean I brined them first overnight in apple juice, apple cider vinegar, sugar and salt. Before putting it on the smoker I cut some small pieces of fat from the bellys and cut holes in the shoulder to insert them. Cooking the bellys over the shoulder will also keep it moist. Used Aarons pork rub on both. Love this stuff.

Using the foil pan from the bellys I first washed it then sanitized it by placing it on the stove until the water boiled away.

I have never had a pork shoulder that I would even consider describing as lean. What am I missing?

Did you brine the bellies into bacon?

Shoulder was from a wild boar. Not much fat but came out great! Bellies were just coated with rub, smoked and then sauced.

Wild hog doesn't eat as well as those guys growing up on a farm.
