Center of gravity/balance

Is there a way I can calculate the balance center on a smoker so that I can install the wheels close to that point, making it much easier to lift and roll?

Trial and error will be your best best for that one.

I would run a 2x4 under the smoker frame and adjust back and forth till you get the balance where you want it.

Keep in mind, it will balance completely different loaded with #200 of port butts...

6" casters on the corners of the frame would make that roll very easy. Put two swivel wheels on the light end and two standard wheels on the heavy end. Make a handle on the light end and that thing will maneuver very well. Make the base a little wider than the smoker so it does not tip over easily.
8" wheels would go off road well. A couple of the wheels with locks to keep them from rolling would be good too.

I personally stay away from any wheel that has air in it for maintenance purposes. I prefer a castor with a metal wheel and a thin rubber tread. Something 1.5" wide would be good.

Absolutely no way anyone can just ‘calculate’ your answer with just dimensional measurements. Just too many variables.
