Tri tips and fish** sorry no fish this time**

Today I picked up a bag of tri tips from our good butcher and I am passing them off to a co-worker to marinade overnight. We are going to smoke the tri tips and grill up some sort of fish too. My smoker trailer will be headed to work to do all the cooking on.

I'll try and get some photos of the food tomorrow night as it's prepared. It's been a while since we cooked at work and I finally told the crew "let's do this" "I'll buy the meat"...so it's on!.

While at the butcher I picked up a 9# bone in pork shoulder that I will be smoking at a later date and four more racks of baby backs to have on hand.

Not sure...others are bringing stuff to cook and I know we have some beans getting made......aside from that I have not heard what else.....I'll know more tomorrow :-c

Well it ended up being tri tips and beans, corn, tater salad and cake.

Here is my trailer rig all ready to go....

Here are the four tri tips.....the one on the left is Santa Margarita marinade, next is a chimichura marinade, then a sesame one and finally a salt and pepper only. This picture was taken at the one hour mark smoking them as I wanted to rotate tham as one of my probes was reading high.

Then we bbq'd some corn

And here is the money shot......all the meat came out medium rare and every one was happy about that. Three of the four hunks were butter tender and one had a vein of gristle in it but was still really good and tender away from the vein.

Every roast was super tasty. I smoked them for two hours at 225 to an internal temp of 135* then they went onto hot coals on the bbq for a char.

What fish did y’all do? I’m really interested in putting some fish on my smoker. I’ve got 20# of catfish and striper I’d like to do but I’m unsure of how to go about it.

Nobody brought fish so that was not cooked this time. We have done salmon and it turned out great.....I did not make the recipe so I don't know how it was prepared. It was smoked a while then set over coals to finish.

Looks great. Which marinade turned out to be your favorite. I like cooking tri tip, a California staple.

That Chimichuri was pretty good but I favor the Santa margarita or Santa Maria marinades best. They have a great flavor and let the taste of meat come through.
