Old Smoke

This is my second smoker build the first was a reverse flow offset I called the Deluxe. Also this build was for a friend. We decided to go with a center feed design using a 4 foot piece of 24” line pipe for the CC and a 16” dia. Water tank for the FB. It started on June 14th and we just finished it last week.

Here is the pipe we started with. It has a 3/8” wall thickness

Next the door for the CC was laid out and cut by hand with an oxy-aceteylene torch.

Next came the angle iron rails to support the racks and then he cook racks and handles.

Here is the handle for the door. We decided to use an old spoke from a wagon wheel and it was treated with linseed oil.

Next I cut and fit the pipe couplings through the door and welded them in for the gauges.

Next came the counter weight for the door. This was quite the challenge to design and make functional. Also in the background you can see the old water tank we used as the FB.

Next I built the BP using 1/2” thick plate and added a perimeter grease dam from flat bar seal welded to the edge.

Sorry now the build jumps way ahead. Here the smoker is generally complete. The plenums were made of 4 x 6 x 3/16” square tubing and I extended the length inside the CC to avoid any grease that might to try getting into the FB.

Here you can see the door on the FB. It still needs a latch to keep the door closed. Inside we made a slide out charcoal basket.

Here is the first time burn out we had some nice clean birch firewood which worked well. This was after a very long shift we worked until 3 am in order to meet a deadline for the first cook. And yes there was plenty of beer consumed to get there! That’s the new and very happy owner on the left.

Here is the cook completed after 17 hours. I managed to reach 205 F without having to wrap. This was by far the best pulled pork I’ve ever had. The smoker worked like a dream. Nice even steady heat and it wasn’t bad on fuel. There’s still a bunch of work to be done but this smoker will will work very well for many years. And oh yeah the bark was amazing!
