Not smoked but still delicious

Should have taken more pics but when we have big party's we like to buy some meat from the mexican butcher in town and cook it on the grill in roasting pans. 4lbs of al pastor and 4lbs of steak.
I always use lump coal regardless of what I'm cooking on. I was told a long time ago when I first started smoking that it responds better to oxygen control and is easier to control temps.

Limes are what we added. There are several ways that Al pastor is made. Chilli marinade and pineapple typically.
