Cold day for smoking

Woke up to -18 F this morning and figured I’d test out the insulated firebox on the blue smoker. It took a little coaxing to heat up but once she was warm, she cooked like a champ. Made up a batch of wings. Dry brine of just salt and left to dry in the fridge overnight. Then rubbed with Chicken Scratch by Thunderbird. Went on the pit at 350 degrees for 45 mins. Basted in brown butter for another 20 mins. Wings were great.

Thx gents. I warmed up some leftover pork shoulder to make pulled pork nachos too. Don't know which went faster. Good day.

Blimey, you know I love using mine in all weathers but even I would be inside with a bottle of wine in that temp. :)

<chuckle> I've ran my double pan GF at -6, didn't radiate enough heat out the bottom to melt the snow, even under the firebox (I'm less than 30 miles from Dave.) When I woke up at 0300 to work on Sunday, I was looking at -21 F on my weather station.

Gotta love well built devices. Nice looking wings, Dave.

Thx J. I don’t mind feeding the beast but I am a little jealous of the set it and forget it. Was tempted to fire up the BGE yesterday.

Wow -6 !! I can't imagine having to go outside in those conditions, you must have really wanted those chicken wings.

Man, are you sayin' that good 'cue ain't worth going outside in those temps? I can ALWAYS put more clothes on, there's a limit to what I can take off. And people just laugh and point a lot.

Dave, i won't argue, that HeaterMeter controller really does spoil me. I fought with a leaky horizontal offset and even with the HM, I never got a more than a couple of hours sleep over a long smoke night. I went big......

Haha. I’m committed to stick burner. At least for now. Once I’m ready to mess around w the next model I’ll come look yours up.
Big T, you gotta embrace the suck up here my man. Cold’s cold. Get out and do your thing. A little struggle in the cold seasons the que. Always grateful.

Dacolson the wings look Great! I was debating on using the smoker this week because it's so cold out. Now you convinced me I need to go out and smoke some meat! Thanks
