Spare Ribs and Root Beer Marinated Ribs on a Stick

Getting ready to fire up the smoker tomorrow.
We've got spare ribs injected with Stubbs Texas Butter and rubbed with Blues Hog, cracked black pepper, red pepper and garlic. Pics of the Root Beer Marinated to come tomorrow. I got 'em all wrapped up and realized there were no pictures.

I'm lucky enough to have a fantastic grocery store near me that has a wonderful meat department. Even the high school kids that help the butchers out are full of knowledge. Often I walk in and tell them I'm looking to smoke something and they'll respond with "We just cut up ... and it looks great." or "I think we've got something in the back that would be great smoked". This is my first time doing spare ribs and there was some guess work in the trimming.

A few last minute touches. The Root Beer Marinated are the ones with the sticks through them at the top and the lower left corner.

I guess I'm a little fuzzy on this whole "on a stick" thing ... don't ribs come with a stick pre-installed by the factory? :D

That's how they came from the butcher. Not sure why. I'll be pulling them out when the go on the UDS.
