Rednecking it up for a smoked Christmas turkey

I have an old pellet smoker that kept having fire in the pellet hopper, so it for replaced by propane. (Side note: I think the problem was actually a grate on the exhaust stack that got clogged, silly me)

I still want to smoke my turkey so I had to improvise. Using the pellet smoker and a grinder, I made one out of cinder blocks. I'll likely be finishing in the oven, but I'll be putting the smoke on in this monstrosity. Reused the drip plate as a baffle, plenty of room for drip pans to prevent a grease fire.

Actually worked really well- better than I expected. Once the blocks are preheated I was able to hold 250F easily. Finished in the oven at 350 to get temp and crisp up the skin. At least I have something to do BBQ on until I can build my smoker. Waiting on friend to acquire steel for the project.

Wish I'd snapped a photo of the bird, came out pretty and tasty. Brined it for ~18 hours so everything was juicy.
