Nice project to be involved with. Even nicer that someone else's money is being spent! Can't wait to see a bit more detail and some food come out of that monster.
First big cook in the books. 50lbs pork shoulder, 50lbs brisket, 30 racks of ribs and 40lbs wings with sides of beans and coleslaw. Smoker cooks fast! Ribs done in 2 1/2 hours at 275! I'm spoiled for life now Found out the XLR-1400 means it'll hold 1400 lbs of meat!!!
And it's so complicated to run...
If it's tourist season, how come I can't shoot 'em?
