Father's Day has begun!

10:00 PM on Saturday and the first Chimney of coals went into the fireox.

On tap are 2 shoulders ~5# each, a 4.5# brisket flat, 3 racks of BB Ribs, chicken thighs and a Bacon Explosion.

Pics to follow.

Brisket and Shoulders ready to go. I did something different this time, I injected the pork with apple juice and the brisket with Lea and Perrins. We'll see how it works out.

Happy Father's Day indeed! I like L/P in my sauces. Anxious to hear how it turns out straight injected naked like into the meat! Looking forward to more pics :kewl:

Nice looking brisket! - dc, you're going to send me a sample right! ;)

Here we are after 1.5 hrs on the racks. I had just added some Apple and Hickory chunks so the chamber was a little smoky! - Hit them with a spritz of apple for the pork and Lea and Perrins for the Brisket.

Yuengling Lite - Oldest brewery in the US.

I figure I'm going to eat enough crap over the next 20 hrs that Lite Beer was a smart move. ;)

Shoulders just went into foil. Few more degrees to go on the brisket. 2:30AM and counting! ;)

Shrimp on the Barbie I can understand, but smoked salmon, though tasty, is best server on a bagel with a schmear.

Good wishes to all the padres reading this today. It's off to work for me, just another call in weekend. I may drive over and inspect TQ's work later, we gotta figure out where to mount the wet bar and prep tables. I gave up on the wide screen idea, too much wiring to get fried. :D
On second thought I might stick with the plan of not ticking off the slightly warped fabricator, that seems to be working so far.

Well - the Inlaws and my Wife's brother's and families all came over and hovered up everything before I even had a chance to take pics of the final product! I guess as a cook that's what you want. ;)

The pork was excellent as were the ribs and the Bacon Explosion.

The chicken was so so. I used a different rub on them and though others liked it I'm not sure about it.

The brisket was a disappointing, it was dry and under done, not tender enough. It kept giving me weird temp readings all night, and even though I pulled it at 190 it was still not great. I was surprised it was dry too because I injected it and I've never done that before.

All in all a good day with good people and you can't ask for more than that.

Hope everyone's day was good as well!

Pville-Sounds like it went well. Cant beat a great day with family and great food. Since there are no pics, it must of been great.
