Have a little different selection of choices out here in ca. None of the "exotic" hardwoods you have out there, but many fruitwoods, oak, etc. Use apple and cherry mostly for smoking and cold smoking, and almond and oak for the cook. I got my hands on a couple of cord of white oak that died from natural causes while still standing, so lost all it's bark- spectacular. Almond burns hot and long, but tends to give off a little too much smoke for me. The oak is still my favorite for constant heat, even burning and favors. But, as Dennis Miller says, that's just my opinion...I could be wrong...

I thought I posted this question earlier but I don't see it, pardon the repeat if such is the case.

Does anyone have thoughts or opinions on using Red Oak? I have a local guy who is willing to sell me a truck load pretty cheap. I am thinking I can use this for precook warm-ups and save the better woods for actual smoking during the cook. Any thoughts?

If it can't be smoked .... try frying it. It that don't work, it's probably best just left alone
