(June 2012 Food Winner Of The Month) spatch-cocked turkey

Post by smokendink71 » June 25th, 2012, 4:17 pm

this is a spatch-cocked turkey I did on the drum yesterday, was it ever good, the whole family loved it. 22.5 lbs before spatch-cocking and it took 2hours and 20 minutes to smoke at 295 degrees

after I spatch-cocked the turkey

after I brined it for about 12 hours and put my rub on it

on the drum

Spatch-cocked! That is awesome Dink! I have been wanting to try that soon with some chickens. I have never seen anyone do that with a turkey! :LG:

Split open, cut the spine out and the keel bone, it's just fancy wording from culinary school lol

I think Dink needs to put spatch-cocked in the slang thread - anything that sounds like a fraternity dare should be in there :D

Anybody besides me waiting for Dink to give us the you-too-can-spatch-cock-at-home tutorial ? (hope I don't have to go to confession for saying that...). I was told years ago never to cook anything smaller than a half chicken. There are exceptions for sure, but it really is a good way to Help everything to be as moist as possible. Dink??

yeah I'll get another turkey out and have my wife film me from start to finish and put it on here, frank had asked me to do the same thing. I'll shoot for maybe later in the week, keep an eye out.
