I know it looks like all I do is ribs and butts and your right, i'm doing my first cook on my discada this weekend, and I'll be trying some brisket and tri tip in the near future. :biggrillin:

Benefits of using a pan:
A chance to use the drippings in your sauce/marinade/moistening gravy for the meat after it's done
Easier to steam cook by just adding a top of tin foil
grates stays cleaner
meat on shelf below doesn't end up sharing recipes from stray drippings (assuming they're different)

Benefits of direct on grate:
slightly more smoke into the meat
Less cholesterol
Less expensive
Less dishes to clean up or haul to the trash
More unpanned meat will fit in the cooker at one time
grill marks


it's really up to each cook depending on what he's going for ... :)

The main reason for the pans for me is it saves on cleanup even though my reverse flow plate is lined with foil, I also use some of the drippings back in the meat for moisture, I must own stock in the aluminum company cause I use lots of it. :rulz:

very good, will have to give it a try, i did some ribs over 4th, usually dont foil them, but i did this time,, i kind of like unfoiled over foiled, might be because it got a little too done, :oopssign:
