I'm sure not everyone will like this chili but I'm mainly putting it out there for the guys that I have sent samples of my chili powder to.
I won a local chili competition with this exact recipe last fall, hope you guys like it.

Dink's Chili

3 lbs Ground Beef (I used 80/20)
1 Medium Onion (fine dice)
2 Roasted Green Chiles (fine dice)
2 oz Dink's Chili Powder (this just happens to be how much is in a sample)
1-6 oz Can Tomato Paste
1 Tbls Minced Garlic
1 #10 Can Bush's Chili Beans
2 oz Beef Base
20 oz Diced Tomatoes
2 C Tomato Juice
2 Tbls Chipotle Tabasco Sauce
1 Bottle of Beer

In a large pot brown meat with onion and pepper.
Drain fat from meat.
Add remaining ingredients, bring to a slight boil over a medium setting while stirring, reduce heat to low and let simmer 2 hours.

Pretty simple and straight forward but like I said it got me a 1st place in a local cook off last fall, this was not an ICS competition, they don't allow beans in their chili.

It looks like a interesting one....too bad its 100 plus degrees out!!! Will have to revisit this one in a few months.....

and I didn't get any *$&% chili powder.... :wtf:

yeah I fix chili year round and have had a lot of people think I'm nuts because of it, but oh well I guess you like what you like lol

Chili, it's not just for winter anymore. :D
Yep, I like me some chili anytime of the year.
Just did a big pot of ham & beans down here, the wife owes me a pan of cornbread or else she aint gettin no beans.
The recipe looks good Dink, I'm betting just about anyone you ask has a chili recipe tucked away in a drawer somewhere with each one having that "secret family ingredient". I never understood the no beans rule in the competitions. Personally I don't care if you use grilled possum instead of beef, if it tastes good serve it. If the judges don't like it they'll score ya low and wont ask for seconds. :D


If it can't be smoked .... try frying it. It that don't work, it's probably best just left alone

Sounds tasty!
Chili is a year round food that can be eaten anytime of day. Its even better with a cold frosty beverage. :beer:


BBQ is just smoke and beers!
Usually more beers than smoke.

just cut everything in half or freeze it in a vacuum seal bag, holds real well in the freezer

Dink's Chili

If DC is like me he can only count up to 3 - then he has to start multiplying ... :D

Besides, it's hard to beat a simple recipe like a dozen eggs - pound of bacon - loaf of toast ...

And thanks for the translation Dink - that 3 pound batch is about right for me and the little woman the way I manage leftovers ...
