Hi I'm Ed and I'm a miniwsm-aholic from KC,MO

I built a miniwsm using the Smokey Joe Gold and a 32 Qt Tamale steamer pot about 2 months ago. So far I've smoked wings, bb ribs, butt, packer brisket, bb ribs, wings, mozzarella, and another packer brisket. The packer is a tight fit but doable by using something to hold it up in the center, draping it over and hanging down on both sides.

I'm thinking about building an UDS so I can smoke brisket(s) easier. I'll be checking out the forums for ideas. I'd also like to learn and do some cold smoking ...

So much to learn and smoke ... so little time!
